Highest touring model seen

You're in luck. I had a pair of Sun AT-18 rims, as original equipment, on my 1997 Cannondale T500. I used them for daily commuting for ten years and they are still in service on my sons bike twenty-seven years later. I was quite impressed by their quality. Well they are still in production and available on Amazon. Pick out some hubs and have your local bike shop build them up. A 700C rim would do just fine on that bike, and then you would have some better quality tires available to you. I prefer Schwalbe tires, but the 700×32 size seems to be disappearing.

I believe that Sun Ringle AT-18 on Amazon is the wrong size @letsbike It's an ISO 507 (24"). If I understand the system correctly a 700c would be an ISO 622. I googled but was unable to find a AT-18 in 700c. There is a CR-18 but in my reading it is a double wall. But often stated as an inexpensive touring rim. I think it's a single eyelet reinforced spoke hole vs double. Still learning.

So sorry, I'm not seeing that rim in 700C either. The stickler is that you want to keep things factory correct. I run Velocity Dyad rims on my 2001 T2000 with Phil Wood hubs. Shimano makes a great inexpensive hub too.

New York. The same seller that I bought my complete Black Lightning from. I really liked the bike, but shipping cost was why I had to pass. Too bad as it was near mint.
I saw this picture yesterday. I'm not sure what is in those front panniers, but it looks a bit excessive. Those bags may need skid plates;)
